Sheet Pan Veggies with Juniper Dressing

Juniper berries (they’re not really berries) are the primary flavor of gin, and have a rich cultural and culinary history in North America. Their flavor reminds me of citrus peels, pine needles, and deeply toasted sunflower seeds. This is a bare-bones recipe that lets their flavor shine in a dressing for winter salads and vegetable roasts. Make this to top a grain bowl or accompany small Winter game.
