This, admittedly, is barely a recipe. But I just couldn’t bear the thought of waiting until next Fall to share a pawpaw dish, and this is certainly my favorite method of using the fruit. Processing pawpaws into purée can be fussy, so I prefer a final preparation that’s quick and uncomplicated - and what’s easier then blending some fruit? Make this for breakfast, especially in the winter, when you need something bright on an overcast morning.
“I would commit atrocities to have a bowl of this” -Tim Clemens @mnforager
Ingredients
2 cup frozen pawpaw purée
OR 2 cup frozen banana slices
1 cup frozen strawberries
1/2 cup greek yogurt
pinch of salt
oat milk
Preparation
Pile the pawpaw purée, strawberries, and greek yogurt into a blender with a pinch of salt. Blend, adding oat milk as necessary to create a smooth, homogenous mixture. Be careful not to add too much liquid or over-blend: you want a scoopable, swirlable finished product.
Transfer to a bowl and top with a nuts, seeds, or a spicebush granola.
